A pitch pattern can be set in the Ground menu (Ground -> Stadium -> Pitch). To change the pattern, simply choose one from the list and click on the green “Save” button in order to apply it to your future home matches.

You can also access the option and change the pitch pattern from the Formation screen in the Squad menu (Pen icon in the upper right pitch corner).
